I love a good crunch in my salad and this Fattoush Salad has the perfect amount! A fresh way to enjoy delicious meal. With just a few simple ingredients, you can put a quick and healthy lunch together in no time. I even made an apple cider garlic herb dressing that was the perfect topping!
1 heart of Romaine lettuce, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 English cucumber, chopped (halves)⠀⠀⠀⠀⠀⠀⠀⠀⠀
5 Roma tomatoes, chopped (halves)⠀⠀⠀⠀⠀⠀⠀⠀⠀
5 radishes, stems removed, thinly sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups chopped fresh parsley leaves, stems removed⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, with the sliced radish and parsley. Toast the pita bread in your toaster oven until it is crisp but not browned set aside. Dress the salad and toss lightly. Finally, add the pita chips, and salt and pepper if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!⠀⠀⠀⠀⠀⠀⠀⠀⠀
